The body needs glucose to produce energy, and glucose comes from the food we eat. However, the body does not use all that energy at the same time. Insulin makes it possible to store and release it as needed. After eating, blood sugar levels rise, usually reaching a peak about an hour after eating.

How high blood sugar levels are, and the exact time of the peak depends on a person’s diet:

  • consumption of large amounts of food
